Fresh Blueberry Fennel Salad

Ingredients

  • 1 1/2 cups fresh blueberries
  • 1/2 cup chopped cucumber
  • 1/2 cup diced fresh pineapple
  • 1/2 cup very thinly sliced fresh fennel (1 small bulb)
  • 2 cups cooked orzo pasta, cooled
  • 1 1/2 tsp rice vinegar
  • 1 tsp toasted sesame oil
  • 1 tsp toasted sesame seeds
  • Salt and pepper to taste

Preparation

Step 1

Combine all ingredients in a large bowl.
Serve cold or at room temp
Tip: add 1 cup diced cooked chicken. Serve with fresh salad greens
