These are so good and they travel well for picnics at the beach. They are even perfect with a tall glass of wine in front of the television for a Saturday night dinner and a movie.

Ingredients

  • 4 whole chicken breast with skin and bones
  • olive oil
  • kosher salt and pepper
  • 1/2 cup mayonnaise
  • 1/3 cup white wine
  • 1/4 cup chutney
  • 2-3 tablespoons curry powder
  • 1 1/2 teaspoon salt
  • 2 stalks of celery sliced
  • 2 scallions sliced
  • 1/4 cup golden raisins
  • 1/2 cup cashew nuts (roast 375 for 10 to 15 minutes)
  • tortilla wraps

Step 1

Preheat oven 350*

With olive oil, rub down chicken breast generously and season with salt and pepper. Roast for 35 to 40 minutes. Let cool, remove skin and bones and chop the meat into bite size pieces and place in a large bowl.

In a food processor, process mayonnaise, wine, chutney, curry powder, and salt. Pour over chicken and mix thoroughly. Add celery, scallions, raisins and cashews and mix thoroughly. Let sit for 30 minutes. Place chicken mixture in the middle of the wrap and fold into a large roll. Cut on the diagonal.
