Ingredients

  • 2-1/2 to 3 lb. boneless pork loin or shoulder roast (tenderloins could be used with a shorter cooking time)
  • 2 garlic cloves
  • 2 bay leaves
  • 1 cup apple juice
  • 1/2 tsp. onion powder
  • 1/2 tsp. celery seed
  • 1/2 tsp. crushed rosemary

Step 1

Place roast in a small oven-proof dish. Cut garlic cloves in half and rub cut surface over roast.
Cut four 1/4-inch pockets into the top of the roast and insert the garlic halves.
Place bay leaves beside roast. Pour apple juice around meat. Sprinkle onion powder, celery seed, and rosemary evenly over meat. Cover the dish loosely with foil, so that it is not touching the meat.
Roast at 325 deg.F (160 deg.C) for half the cooking time, then remove foil. Roast remaining time or until internal temp. reaches 160 deg.F (70 deg.C). DO NOT OVERCOOK!
Remove from oven and let stand, covered with foil, about 10 minutes before carving. Spoon pan juices over roast slices when serving.

Cooking times:
Loin - 30-35 minutes per pound
Picnic Shoulder - 30-35 min. per pound (bone-in); 35-40 min. per pound (boneless)
