Waffles

This recipe makes waffles that are crispy on tbe outside and light and fluffy on the inside...and they taste good too!
The cornstarch helps to prevent the waffles from getting soggy from the steam while cooking and the stiff egg whites add alot of air to the batter which makes them light and fluffy.

Ingredients
- 2 eggs (separated and at room temperature)
- 2 cups buttermilk
- 1/3 cup vegetable oil
- 1 tbl vanilla extract (or try amaretto liqeur)
- 3/4 cups all purpose flour
- 3/4 cups wheat flour
- 1/2 cup cornstarch
- 1 tbl baking powder
- 1 tsp baking soda
- 1 tsp salt
- 3 tbl sugar

Preparation
Step 1
Combine the buttermilk, egg yolks, vegetable oil and vanilla extract (or amaretto).
Whisk to combine the dry ingredients - except for 1 tbl of sugar.
Add just a pinch of salt to the egg whites and beat until they are stiff and form peaks when you take the beater out (add the 1 tbl of sugar to them during the last 15 seconds or so, which will help stabilize them).
Add the buttermilk mixture to the dry mixture and mix well. Then gently fold in the egg whites.
Pour into a preheated waffle maker and cook for about 3-4 minutes.
