Ingredients

  • 4 pound eye of round roast
  • Salt and pepper to taste
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 medium green pepper, chopped
  • 2 tablespoons butter
  • 2 tablespoons flour
  • 8 oz. can tomato sauce
  • 2/3 cup beef bouillon
  • 1/4 ¼ tsp basil

Preparation

Step 1

Sprinkle roast with salt and pepper. Let stand 30 minutes. Saute onion, green pepper, and garlic in butter until soft. Blend in flour. Add tomato sauce, bouillon and basil. Heat until almost boiling. Place meat on a 4 foot long length of heavy duty foil and center over baking dish. Pour sauce over meat and seal foil securely. Cook at 350 for 3 ½ hours.
