Potato Pancakes

Ingredients

  • 3 cups peeled grated potatoes (finely grated, should look like applesauce)
  • 1 egg, lightly beaten
  • 1/4 cup finely grated onion (like the potatoes)
  • 1 Tablespoon all-purpose flour
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/4 cup shredded cheese (optional)

•Rinse potatoes in cold water; drain thoroughly. In a large bowl, grate the Potatoes and onion and combine with the egg, flour, salt and pepper. Pour a ¼ inch of oil into a skillet and preheat • Pour batter into skillet using a large spoon into 2-3 inch patties. Patties should be barely floating. Fry in batches 5-6 minutes on each side or until golden brown. Drain on paper towels. Serve with sour cream, ketchup, or whatever floats your boat.
