Ingredients
- 1 cup of almond meal
- 1/2 cup finely chopped walnuts
- 1/2 tsp baking powder
- 1 tablespoon cinnamon
- 1 egg
- 1 cup of cooked and mashed yam, or pumpkin
- 1/4 cup coconut milk
- 2-4 tablespoons maple syrup
- handful of chocolate chips
Preparation
Step 1
Preheat oven to 400.
In a mixing bowl, stir together all the dry ingredients.
In another small mixing bowl whisk together the egg, coconut milk, and maple syrup.
Add the wet ingredients to the dry ingredients and mix well.
Add the mashed yam, pumpkin, or squash to the dough and mix well.
Stir in chocolate chips
Grease a baking sheet with coconut oil or organic grass fed butter and scoop about one heaping tablespoon per cookie onto the baking sheet and bake for 20 minutes.
Makes approximately 15 cookies
