Ingredients
- CUP:
- 2 egg whites
- 1/8 tsp. cream of tarter
- 2/3 cup sugar
- 2/3 cup pecans, chopped
- FILLING:
- 3 egg yolks
- 3 Tbsp. flour
- 1/2 cup sugar
- 1 can evaporated milk
- 1/2 - 2/3 cup pecans
- 1 tsp. vanilla

Step 1
CUP:
Beat egg whites with cream of tarter until foamy. Add sugar until stiff and glossy. Stir in pecans. Spread by spoonfuls onto the bottoms and sides of extremely well buttered muffin tins. Bake 25-30 minutes at 325. Cool for 5 minutes. Remove by loosening edges with a knife.
FILLING:
Beat egg yolks well; add flour, sugar, and milk. Put on stove until thick. Add pecan and vanilla. Cool and add in shells. Top with whipped cream after cooled.
