Ingredients

  • 1/2 bushel of ripe tomatoes
  • 8 small onions
  • 3 cups chopped bell peppers
  • 1 cup vegetable oil
  • 4 (15 oz ea) cans tomato paste
  • 1/2 cup salt
  • 1 cup sugar
  • 2 tblsp oregano
  • 2 tblsp Italian seasoning
  • 1 tblsp basil

Preparation

Step 1

Blanch tomatoes to remove the skins. Put cut up tomatoes, peppers and onions into a 16 qt pot and add salt, oil, sugar, oregano, Italian seasoning and basil. Cook for 1 hour on medium heat, stirring frequently. Add tomato paste and cook for 20 minutes more. Ladle sauce into hot quart jars. Fill to within 1/4 inch of top. Wipe jar rims clean and seal with two piece lids. Process 5 to 10 minutes in hot water bath.
