Skinny potato salad

  • 2 pds red potatoes
  • 5 hard boiled eggs
  • 3/4 c 2% plain greek yogurt
  • 3 stalks celery
  • 1/2 c red onion
  • 1 tbs dijon mustard
  • 1 tbs apple cider or white wine vinegar
  • 1 c herbs (like dill or parsley
  • 1 tsp salt and pepper

Preparation

Step 1

mix cooled/chopped boiled red potatoes, choopped hard boiled eggs, chopped onions, celery,and all other ingredients
chill
