Ingredients

  • 1 large onion, chopped (1 cup)
  • 1 Tbsp butter or margerine
  • 4 cups broth
  • 1-1/2 pound head of cauliflower, cut into flowerets
  • 1 carrot, peel & dice
  • 1 cup low-fat milk (approximately)
  • salt to taste, pepper
  • 1/4 tsp nutmeg
  • (add a little curry if you like it)

I don't have directions, just list of ingred. but it seems pretty straightforward.
--saute onion, add broth, veggies and seasoning.  Puree and add milk/nutmeg last.
