- 1/4 cup warm water (110 degrees)
- 2 tsp active dry yeast (1 packet)
- 2 tbs olive oil
- 1 3/4 cups all-purpose flour, plus additional
- 1 tsp salt

Step 1
1. In a small bowl, sprinkle the yeast over ¼ cup of the warm water and let sit 8 to 10
minutes or until foamy.
2. In a big bowl, combine the yeast mixture, 1 tbs olive oil, rye flour, 1 ¾ cups of the all
purpose flour, salt, and remaining ½ cup of water. Mix until the dough forms a ball. If the
dough is very sticky, add a little extra flour. Continue to knead for about 4 to 5 minutes by
hand, until the dough is smooth and satiny.
3. Smear a large bowl with the remaining tbs of olive oil. Place the dough in the bowl
and turn it to coat with oil. Cover with plastic wrap and let the dough rise in a warm
place until it has doubled, 1 to 2 hours.
4. Lightly flour a board and roll the dough out onto a 14-inch circle. Sprinkle flour on
a pizza pan or cookie sheet and place the dough on it. Cover with a towel and allow to rest
for 30 minutes.
3. Top the pizza and bake in a preheated 475 degree oven on the bottom rack for 10 to 12
minutes or until the dough is nicely browned and the topping is hot.
