Ingredients
- 1 Tsp Olive Oil
- 4 ea Red Onion, Medium Sized, Peeled, halved and sliced
- 1/2 Tsp of Salt
- 2 Tblsp Tomato Paste
- 2-1/2 oz Brown Sugar
- 2-1/2 oz of Red Wine Vinegar
- 1 Tblsp of Dry Mustard
- 1 Beer 12oz
- 4 Beef Strip Loin Steak, each about 3/4” thick
- 1/2 Tsp Salt
- 1/4 Tsp Fresh Cracked Black Pepper
Preparation
Step 1
Prepare the grill. Heat oil in large sauce pan over medium high heat. Add onions and salt. Cook onions, stirring frequently, until translucent, about 5 minutes. Stir in tomato paste, stir well and cook until lightly caramelized, about 3 minutes.
Add brown sugar, vinegar, mustard, and beer to onions. reduce heat to low, place lid just off pan to create a small vent, and continue to simmer slowly, about 30 minutes. Stir contents every 10 minutes to prevent burning.
When mixture is cooked and has a thick sauce lie consistency, use a wooden spoon to lose the concentrated juices from pan into the compote. Hold warm. Season the steak with the salt and pepper and grill to desire doneness.
