Ingredients

  • 1 tbs olive oil
  • 3 lb chicken parts w/o skin
  • 4 cloves minced garlic
  • 2 tsp Italian seasoning, crushed
  • 1 28oz can crushed tomatoes in puree
  • 1 lb mushrooms
  • 2 onions chopped
  • 1 green pepper cut into 2" long strips
  • 1 1/2 c chicken stock
  • 1/4 c cornstarch
  • Pasta or rice

Preparation

Step 1

Heat oil in skillet over medium-high heet. Add chicken and cook until well browned on all sides.

Stir garlic, Italian seasoning, tomatoes, muchrooms, onions, pepper and 1 cup stock in 6 qt slow cooker. Add chicken and turn to coat.

Cover and cook on LOW 7 or 8 hours or until chicken is cooked through. Remove chicken and keep warm.

Stir cornstarch and remaining stock in small bowl until mixture is smooth. Stir cornstarch mixture in cooker. Cover and cook on HIGH 10 minutes or until mixture boils and thickens.

Serve with chicken and pasta or rice.
