Ingredients
- 1 tbs canola oil
- 1 cup broccoli florets
- 1/2 cup mushrooms, sliced
- 1/2 cup red pepper, diced
- 3 scallions, diced
- 3 or 4 large flour tortillas
- 3 oz grated Monterey Jack cheese (or any kind of shredded cheese)
- 1/4 cup salsa
- 1/4 cup goat cheese (or sour cream)
- cilantro for garnish (optional)
Preparation
Step 1
1. In a large skillet, heat the oil over medium heat.
2. Add the broccoli, mushrooms, pepper and scallions and cook, stirring for 2 or 3 minutes.
3. Place 1/4 to 1/3 of the mixture in the center of tortilla.
4. Sprinkle with cheese and fold the tortilla in half.
5. Bake for 5 minutes at 400 degrees F or until cheese melts.
6. Spoon the salsa and sour cream on top of the taco. Garnish with cilantro.
