Ultimate Twice Baked Potatoes

Ingredients

  • 2 large baking potatoes
  • 4 slices of bacon
  • 1/2 c sour cream
  • 1/4 c milk
  • 2 TBSP butter
  • 1/4 tsp salt
  • 1/4 tsp pepper
  • 1/2 c shredded cheddar cheese (divided)
  • *bacon optional

Preparation

Step 1

1. Pre-heat oven to 350 degrees.

2.Bake potatoes in oven for 1 hour.

3. Place bacon in large skillet. Cook over medium-high heat until evenly brown. Drain, crumble and set aside.

4. When potatoes are done let cook 10 minutes.

5. Slice potatoes in 1/2 lengthwise and scoop out inside and put in a large bowl.

6. Add sour cream, milk, butter, salt, pepper and 1/2 c cheese to inside of potatoes.

7. Mix with hand mixer until creamy.

8. Spoon the mixture into the potato skins.

9. Top each with remaining cheese and bacon.

10. Bake for another 15 minutes.
