Flan: Coconut, Lime and Caramel

This is a fabulous dish for Spring dining outdoors. In Florida we love grilling and eating outdoors during the spring months and this is a wonderful dessert to end the evening.

Ingredients
- 3/4 cup sugar
- 1/4 cup water
- 2 cans coconut milk
- 1 cup sweetened condensed milk
- 3 large eggs/ 2 egg yolks
- zest of a whole lime
- 1/4 cups coconut

Preparation
Step 1
Preheat 325*
Combine sugar and water, and cook until golden brown.
Pour into a 9' pie plate or baking pan.
Put all ingredients except lime zest into a blender and blend until completely smooth. Stir in lime zest. Pour all ingredients over caramel mixture. Do not stir with a spoon at this point as not to disturb the caramel under the mixture. Bake 1 hour in a dish with a bath water half way up the sides of the dish to avoid custard from cracking. Chill for at least 2 hours.
