- 1 cup frozen petite peas thawed
- 4 oz diced and crisped pancetta
- 2 teaspoons of thyme leaves for garnish
- Creamy Lemon-thyme dressing( recipe attached)

Step 1
Combine first 3 salad ingredients in a large bowl. Add dressing if serving immediately. Garnish with thyme leaves. If making ahead... Leave in fridge until ready to serve with dressing separate.
Dressing Ingredients...combine in food processor and keep cool until ready to serve.
3/4 cup mayo
1/3 cup olive oil
1/4 cup lemon juice
1 1/2 tbsp lemon zest
1 tbsp plus 2 tsp sugar
1 1/2 tsp salt
1 tsp whole grain dijon mustard
1 tsp fresh thyme leaves
1/2 tsp cracked pepper
