Rotisserie Brined Ham

Ingredients
- One fresh, brined, pastured ham - 1.25 to 1.5 lbs, rinsed and patted dry
- 2 teaspoons Organic Pork Herb Trio {sage, thyme, marjoram}
- Sea salt, at your discretion
Preparation
Step 1
Rub the herb trio on the ham, covering it thoroughly. Season with sea salt.
Load your rotisserie's spit rod with the ham.
Cook about 30 minutes per pound {or according to your rotisserie's suggested time for a pork loin}.
Switch the rotisserie to NO HEAT and let it spin for 10 minutes. This still allows the juices to redistribute, though more evenly than if you let it rest on a cutting board.
Carefully remove ham from rod, slice, and serve.
