Pickled Tuna-Salad Sandwiches

Ingredients
- 1 6-ounce can tina, drained
- 2 tbsp pickle relish (dill or sweet)
- 1 hard-cooked egg, peeled and finely chopped (optional)
- 2 tbsp mayonnaise
- 1 tbsp chopped fresh flat-leaf parsley
- 1/4 tsp Kosher salt
- 1/8 tsp black pepper
- 8 slices bread

Step 1
In a small bowl, gently combine the tuna, relish, and egg (if using). Add the mayonnaise and parlsey and combine. Season with the salt and pepper. Divide the salad among 4 slices of bread and sandwich with the remaining slices. Cut in half and serve.
