Ingredients

  • 1 whole wheat, high fiber pita cut in half
  • 1/2 cup canned black beans
  • Salsa
  • 1 tsp olive oil
  • Women: 4 egg whites and 1 yolk (omega 3 eggs) (whisked)
  • (Men should use 6 egg whites and 2 yolks)
  • Sea salt and pepper to taste
  • 1 ounce low fat white cheddar cheese

Preparation

Step 1

Place the olive oil in the non-stick fry pan. Pour the egg mixture into the pan. Let cook for a few minutes and then sprinkle grated cheese. Cook until eggs are completely set and cheese is melted.

Place this in the pita and top with salsa and black beans. Salt and pepper to taste.
