Ingredients

  • 1 whole omega-3 egg
  • 1 ⁄2 cup frozen green peas
  • 3 large egg whites
  • 1 1/4 cup frozen spinach
  • 1 ounce goat cheese
  • 1 tablespoon chopped onion
  • Sea salt and pepper to taste
  • 1-2 teaspoons extra-virgin olive oil
  • 1 slice whole-grain toast (optional)

Preparation

Step 1

Preheat the oven to 350°F. Beat the egg and egg whites in a medium-sized bowl with a wire whisk until blended. Mix in all the remaining ingredients except the olive oil with the eggs. Spread the olive oil in a small skillet and add the egg mixture. Bake in the oven for 15–20 minutes, or until the frittata is fully set.
