Ingredients
- 3 skinless/boneless chicken breasts
- 4 medium red potatoes
- 1 yellow onion, diced
- 2 garlic cloves, diced
- 1/2 C diced pimentos
- 1 tsp salt
- corn oil
- 1 cube chicken broth
- 1 Tbs olive oil
- 1/2 Tbs vinegar
- 1/2 C tomato sauce
- 2 C water

Preparation
Step 1
Sautee diced onions and garlic in corn oil until lightly brown - Use pressure cooker pan
Peel and slice potatoes
Put all ingredients in pressure cooker and pressure cook for 15 minutes - Set temperature on stove element (electric) to low-medium, # 2 - #5
Simmer longer if you like a thicker sauce
You can also add or substiture frozen carrots for potatoes
