Raisin Walnut Bread

Ingredients
- 2 cups whole wheat pastry flour
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1/4 cup maple syrup
- 1 cup nondairy milk
- 1 small banana, mashed
- I cup raisins
- 1/2 cup walnuts

Preparation
Step 1
1. Preheat oven to 350 degrees F.
2. Combine the flour, baking powder, and baking soda in a large mixing bowl. Add the syrup, milk, banana, raisins, and walnuts. Stir just enough to mix. The batter will be fairly stiff and sticky.
3. Spoon into a 9 x 5 nonstick loaf pan and bake for 45 minutes. Remove the pan from the oven and place on a rack to cool.
