Spelt Flour Chocolate Cupcakes

It is hard to believe that these rich little cupcakes are dairy free.

Ingredients

  • 3 cups sifted spelt flour
  • 3/4 cup unsweetened cocoa powder
  • 3/4 teaspoon baking soda
  • pinch salt
  • 2 cups light agave syrup
  • 3/4 cup expeller pressed safflower oil
  • 2 teaspoons vanilla extract
  • 2 tablespoons apple cider vinegar
  • 1 cup water

Preparation

Step 1

Preheat oven to 375 degrees. Combine flour, cocoa powder, baking soda and salt in a medium mixing bowl. In another large bowl, whisk together agave, oil, water and vanilla. Add in dry ingredients until smooth. Whisk in the vinegar last.
Spoon batter into paper-lined cupcake molds. Bake until dry when tested with a metal skewer, 20 to 25 minutes. Frost with your favorite icing or simply dust with confectioners sugar.
