Chicken Croquettes

Traditional chicken croquettes are easy to make and a great way to use up leftover chicken. A delicious Brazilian appetizer for your Olympics party!

Ingredients
- 4 cups cooked chicken, shredded
- 1 cup cheddar cheese, shredded
- 2 eggs
- 1/4 onion, chopped
- 1/4 cup seasoned breadcrumbs
- 2 tablespoons poultry seasoning
Preparation
Step 1
Combine all ingredients in a medium bowl. Chill the mixture for at least 30 minutes.
Place a large skillet coated with cooking spray over medium-high heat.
Divide the mixture into 8 portions, flattening slightly, and cook for about five minutes per side, until the outside is crispy and the cheese has melted.
Serve with sour cream.
