7 Layer Fiesta Dip

- Refried Beans
- Chopped Green Chilis
- 1 lb ground beef, browned, drained
- 1 Pkg Taco seasoning mix
- 1 16 oz jar Picante Sauce
- 1 cup cheddar cheese, grated
- 1 cup monteray pepper jack, grated
- sour cream
- black olives, chopped
- scallions, chopped

Step 1
LAYER 1 - SPREAD 1 CAN REFRIED BEANS IN THE BOTTOM OF A BAKING DISH OR PAN
LAYER 2 - SPREAD 1 CAN CHOPPED GREEN CHILES (DON'T WORRY THIS IS A VERY, VERY MILD PEPPER) OVER BEANS
LAYER 3 - BROWN 1 POUND GROUND BEEF, DRAIN THEN MIX WITH 1 PKG. TACO SEASONING MIX.
SPRINKLE SEASONED BEEF OVER BEANS AND CHILES.
LAYER 4 - POUR 1 16 OZ. JAR OF PICANTE SAUCE OVER BEEF
LAYER 5 - MIX 1 CUP GRATED CHEDDAR CHEESE WITH 1 CUP OF GRATED MONTERY PEPPER JACK CHEESE AND COVER PICANTE LAYER WITH THE CHEESE
LAYER 6 - SPREAD WITH SOUR CREAM
LAYER 7 - SPRINKLE WITH CHOPPED BLACK OLIVES AND CHOPPED SCALLIONS
BAKE AT400° FOR 10-15 MIN. OR UNTIL CHEESE IS MELTED AND BUBBLY - SERVE HOT WITH TORTILLA CHIPS
FOR A LOW-FAT DIP USE: FAT-FREE REFRIED BEANS (DIFFERENT FROM VEGETERIAN BEANS WHICH USE OIL AND THEREFORE STILL HAVE LOTS OF FAT), FAT-FREE/REDUCED FAT SOUR CREAM, REDUCED FAT CHEESE, GROUND TURKEY (OR MAKE IT MEATLESS) AND DIP WITH BAKED TORTILLA CHIPS.
BE CREATIVE - IT'S EASY TO DO WITH THIS DIP. I DON'T CARE FOR SOUR CREAM SO I USUALLY LEAVE IT OUT OR SUBSTITUTE GUACOMOLE (BUT ADD THAT AFTER COOKING, AS IT DOESN'T HEAT WELL). YOU CAN PUT MEAT ON ONLY HALF IF YOU HAVE VEGGIE GUESTS COMING. YOU CAN SUBSTITUTE JALEPENOS FOR THE GREEN CHILES FOR A SPICIER FLAVOR OR SUBSTITUTE BLACK BEANS FOR THE REFRIED BEANS. I'VE EVENTAKEN THIS TO A PARTY AND ADDED SOUR CREAM (AFTER COOKING THE DIP) BY PUTTING THE SOUR CREAM IN A CAKE DECORATOR'S BAG AND WRITING A MESSAGE. Etc.
