This is the original salsa recipe that I created and it reminds me of the salsa that I ate when I was in Mexico in the early 1990's.

Ingredients

  • 4 cups tomatoes, washed and quartered
  • 3-5 jalapeños, finely diced
  • 1 green pepper, finely diced
  • 1/3 red onion OR sweet onion, finely diced
  • 3/4 cup fresh cilantro, chopped
  • 1 tsp salt
  • 2 garlic cloves, minced (approximately 1 1/2 tsp)
  • 1/2 tsp crushed red pepper (optional)

Preparation

Step 1

Pulse 2 cups of the tomatoes *WITH* the bottom blade installed in a food processor. Remove the bottom blade and add the remaining 2 cups of tomatoes. Pulse the food processor 2 - 4 times or until the tomatoes are well blended together. Place the tomatoes into a Dutch oven pot. Add the green pepper, salt, jalapeños, garlic, onion, cilantro, and red pepper; Bring the mixture to a boil, stirring occasionally to infuse the flavors. Turn the heat down to low and simmer for 2 hours. Can or freeze.
