Ingredients
- Cake:
- 4 eggs
- 2 cups sugar
- 2 cups flour
- 2 tsp baking powder
- 1 1/2 cups shortening
- 3 cups grated carrots
- 3/4 tsp salt
- 2 tsp cinnamon
- Icing:
- 1 8 oz pack cream cheese
- 2 tsp vanilla
- 1 box powdered sugar
- 1 stick butter
- dash of salt
Preparation
Step 1
Cake:
Beat eggs till frothy. Add sugar, gradually. Mix dry ingredients, add egg mixture, carrots and nuts if desired. Bake in greased pan at 325 degrees.
Icing:
Thaw cream cheese ad butter at room temperature. Add other ingredients. Spread over cooled cake.
