  • 8 lb Standing Rib Roast
  • 1/4 C Soy Sauce
  • 1/2 tsp ground Allspice
  • 1 C Beef Stock
  • 4-6 Garlic Cloves, cut into slivers
  • 1 Tbl freshly Ground Pepper
  • 3 C Dark Beer or Stout

Step 1

Using the tip of a sharp knife, make 1" deep slits at regular intervals over the entire surface of the roast. Insert the garlic slivers into the slits. Place in a roasting pan. Brush the outside of the roast with the soy sauce; sprinkle with the pepper and allspice. Let the roast stand at room temperature for 1 hour.

Preheat oven to 350. Roast the beef 14 minutes per pound for medium-rare (13 per for rare; 15 for medium), basting every 10 minutes with dark beer or stout.

Transfer to a warm platter and let sit for 15 minutes before carving. Skim the fat from the roasting pan and discard. Place the pan on the stove over medium-high heat. Pour in the stock (or more beer). Deglaze the pan by stirring to dislodge any browned bits. Simmer a few minutes, then taste and adjust the seasoning. Carve the roast and spoon some of the sauce over the meat.

*Serve with glazed carrots and baked potatoes with cold horseradish cream
