Shoe Peg Corn Casserole

Ingredients
- 1/2 cup butter
- 1 2/3 cup Ritz (or round butter flavored) crackers, crushed
- 1 cup chopped celery
- 1 cup chopped onion
- 1 cup chopped green pepper
- 1/2 cup shredded Cheddar cheese
- 1 can shoe peg corn, drained
- 1 can French green beans, drained
- 1 can cream of celery soup
- 1 cup sour cream
- 1/8 tsp. pepper

Preparation
Step 1
Melt butter (45-60 seconds) in 2-cup uncovered glass measuring cup. Add crackers and mix til coated.
Combine remaining ingredients in 3-qt. casserole. Cover and microwave on high 5 minutes. Stir. Sprinkle with crackers and cover.
Microwave on high 9-10 minutes. Let stand a few minutes.
