Ingredients

  • 2 cups finely crushed chocolate cookies
  • 1/4 cup unsalted Earth Balance butter, melted
  • 1 pint chocolate almond milk ice cream
  • 1 pint cappuccino swirl almond milk ice cream
  • 8 ounces gluten free, dairy free oreos
  • 1 cup mini chocolate chips

Preparation

Step 1

In your food processor or blender (I use a Blendtec), finely crush the chocolate cookies for your crust. Blend in the melted butter and stir until combined. Press into your 9″ pie pan.
Thaw out the ice cream until you can easily work with it. Once thawed, in a large bowl, stir the chocolate and cappuccino ice creams together until combined. Crush the oreos and stir them into the ice cream, along with the mini chocolate chips.
Pour the ice cream mixture into the pie pan.
(Optional) Sprinkle a few extra chocolate chips on top for decoration.
Freeze for at least 4 hours before serving.
