Ingredients

  • 2 rashers bacon
  • 2 cans, black bean, thoroughly rinsed and drained
  • 1 clove garlic, minced
  • 1 lg roma tomato, skin removed, course chopped
  • 1/2 medium sweet onion, coursed chopped
  • 1 dried ancho chile, stemmed and seeded
  • 1 dried chipotle chile or 1 canned chipotle chile in adobo
  • Chicken broth/stock to cover

Preparation

Step 1

Cook bacon in a medium pot until crisp, reserve bacon fat.

Add remaining ingredients to bacon and enough stock to just cover the contents of the pan; bring to a boil

Reduce heat and simmer, partially covered, over low heat for two hours.

Let cool and puree with an immersion (stick) blender or food processor.

Heat reserved bacon fat 2 T (add more oil if needed) over med-high heat and fry bean puree to desired consistency.
