Zucchini Bread

Ingredients

  • 3 cups sifted flour
  • 2 cups sugar
  • 1 tsp. salt
  • 1 tsp. baking soda
  • 1 & 1/2 tsp. baking powder
  • 3 tsp. cinnamon
  • 3 eggs
  • 1 cup oil
  • 2 cups grated, peeled zucchini
  • 3 tsp. vanilla
  • 1/2 cup chopped nuts (I use walnuts)

Preparation

Step 1

Combine all dry ingredients in a bowl and blend thoroughly with a mixer. Add wet ingredients to dry mixture and mix well. Stir in chopped nuts.

Pour mixture into 2 greased & floured loaf pans. Bake for one hour at 325 degrees.

Remove from oven and let pans cool slightly before removing from pan.

*A Bundt Pan may be used in place of 2 loaf pans. Can be frozen for use later.
