Mixed Greens with Pears, Goat Cheese & Fig Vinaigrette

Ingredients

  • 6 cups mixed greens
  • 1 1/2 cups thinly sliced bosc pear
  • 1/4 cup goat cheese
  • 6 tbsp fig vinaigrette-(as follows)
  • 1/2 cup basalmic vinegar
  • 5 dried figs
  • 6 tbsp water
  • 1 tbsp fresh lemon juice
  • 2 tbsp minced shallots
  • 1 tsp minced fresh thyme
  • 1 garlic clove-minced
  • 1 tbsp olive oil
  • 1/4 tsp salt

Preparation

Step 1

Combine vinegar and figs in saucepan over high heat, bring to a boil. Simmer 5 min, combine with 6 tbsp water and lemon juice in a blender, process until smooth. Place in a small bowl, stir in shallots, thyme and garlic, add oil and salt, stir with whisk. Combine all for salad.
