Roasted Cornish Game Hen with Mango 1 Picture

  • 1 Tbsps salt
  • 1 Tbsp canola oil
  • 2 tsps fresh ground black pepper
  • 1 1/2 tsp fresh thyme chopped
  • 2 Cornish Game
  • Hens
  • 1/2 cup mango chutney

Preparation

Step 1

1. Preheat oven to 400° degrees.
2. Prepare hens by draining well and patting
dry with kitchen towel.
3. Rub hens with oil, thyme, salt and pepper.
4. Place on roasting pans with rack and roast
in oven for 18-22 minutes.
1. 3. Remove from oven and let cool slightly,
pat dry with paper towel.
5. Puree chutney in food processor until
smooth place in medium bowl.
6. Using hands glaze each hen and place
back on roasting pan.
7. Divide remaining glaze equally between
hens and place in oven for 5 -10 minutes
more until internal temperature reaches
165° in the thickest part of the thigh.
8. Platter and serve
