Ingredients

  • 3 large tomatoes
  • 3 T capers, chopped
  • 2 crushed garlic cloves
  • 3 minced anchovy filets
  • ½ c. EVOO
  • Basil or parsley

Preparation

Step 1

Rough chop capers, tomatoes and add to bowl. Add garlic, anchovies and oil, season with fresh ground pepper. Mix well and let stand for 1 hour at room temperature. Add chopped basil or parsley before serving.

Serve with pasta, toasted French bread or grilled fish.
