Quiche Lorraine

One my all time favorite brunch or breakfast dishes is this Quiche Lorraine, a savory, open-faced pastry crust with a filling of eggs, bacon bits, ham and or sausage, green peppers, onions and cheese. Yum!

Ingredients
- 1 (9-inch) pie shell
- 4 eggs, whipped
- 1 cup milk
- 3 tablespoons flour
- 1/2 teaspoon dry mustard
- Dash of salt
- 1/2 cup bacon bits, ham or sausage
- 1 cup white cheese (your choice)
- 1/2 cup cheddar cheese, shredded
- Sauteed onions, optional
- Green peppers, optional
Preparation
Step 1
In a medium bowl, whip eggs, milk, salt and dry mustard. Stir in the flour, then your choice of meat and cheeses. Pour into pie shell. You can bake the pie shell for just a little while first.
Bake at 400°F for 30 minutes. Turn oven off but leave in for a little while to make sure the eggs are done. You can save some of the cheese and put on top before putting into oven.
