Ingredients
- 1/2 c fresh bread crumbs
- 1/2 c milk
- 2 # mixed ground meat; ideally 1 # beef, 1/2 # veal and 1/2 # pork
- 1 egg, lightly beaten
- 1/2 c freshly grated parmesan
- 1/4 c minced parsley
- 1/2 t minced garlic
- 1 small onion minced
- 1 small carrot, peeled and minced
- 1 t fresh sage leaves or pinch of dried
- Salt and pepper to taste
- Equal parts Ketchup, soy sauce and Worcestershire sauce and slather on top
Preparation
Step 1
Preheat oven to 350º
Soak bread in milk 5 minutes
Mix together all ingredients – don’t over mix.
Shape into a free form loaf
Bake 45 – 60 minutes
When done, meatloaf will be brown and firm – instant read thermometer will read 160°
