Quick Shrimp

Ingredients

  • 2 gr. onions chopped
  • 1/2 c. finely chopped green pepper
  • 2 tbs butter
  • 2 c. chopped tomatoes
  • 6 oz sliced mushrooms
  • 1/4 c. chicken broth
  • 2 tbs fresh chopped parsley
  • 1 tsp garlic powder
  • 1 tsp chili powder
  • 1 tsp salt
  • 1 tsp basil
  • 1 lb sm shrimp, peeled and deveined
  • Cooked rice

Preparation

Step 1

Sauté onion and pepper in butter until tender. Add ingredients except shrimp. Bring to a boil, reduce heat, cover and simmer 10 minutes. Add shrimp, cover and simmer 5 minutes or until shrimp is tender. Serve over rice.
