Ingredients
- 3 lb spinach leaves ( substitute frozen leaf spinach )
- 1 onion
- 2 Tbl minced garlic
- 2 packages Borsin cheese
- 3/4 stick butter
- 1 cup half n half
- 1/4 cup flour
- 1/4 cup Parmesan cheese
- 1 Tbl Lemon zest
- 1 dash of ground Nutmeg
- 1 teaspoons Cajun seasoning
- 2 tsp Garlic salt
- 4 bread slices
- 2 Tbl olive oil
Preparation
Step 1
3 lb fresh spinach take off stems and tear in half
Cook for 5 min in 1 cup of water drain and set aside
Sautee ½ onion minced and 2 Tbl Garlic minced in 3/4 stick of butter ( 6 Tbl )
Blend in ¼ cup of flour simmer on low heat until mixture bubbles.
Then gradually whisk in 1 cup of cream until it thickens.
Now whisk in small pieces of Borsin cheese…if too thick add a little milk..
Mix in ¼ cup parmesan cheese and remaining seasonings:
(1 Tbl Lemon zest, 1 dash of ground Nutmeg, 1 teaspoons Cajun seasoning, 2 tsp Garlic salt )
Bread crumbs 4 slices with Olive oil in blender ( add parmesan cheese and salt )
Mix everything into baking dish..top with bread crumbs and bake @ 350 for 20 min
