Ingredients
- 1 pound lean ground beef
- 2 garlic cloves, minced
- 1/4 teaspoon ground ginger
- 2 tablespoons water
- 1 medium-sized red bell pepper, cut into 1/2-inch chunks
- 1 package (6 ounces) frozen pea pods, thawed
- 3 cups cold cooked rice
- 3 tablespoons soy sauce
- 2 teaspoons sesame oil
- 2 scallions, thinly sliced
Preparation
Step 1
In a large nonstick skillet, combine the ground beef, garlic, and ginger and brown over medium heat; crumble the beef and cook for 8 to 10 minutes, or until no pink remains in the beef. Drain off the excess liquid and remove the beef to a large bowl.
Place the water in the skillet and heat over medium-high heat until hot; add the bell pepper and pea pods and cook for 3 minutes, or until the pepper is crisp-tender, stirring occasionally. Add the rice, soy sauce, and sesame oil; mix well. Return the beef to the skillet and cook for 5 minutes, or until heated through. Stir in the scallions just before serving.
