Tiered Cakelets

Ingredients
- Cakelets:
- 3 large eggs
- 1 1/2 tsp pure vanilla extract
- 1 1/2 cups (185 gr) cake flour
- 3/4 tsp baking powder
- 1/4 tsp salt
- 12 TBS. (1 1/2 sticks/185 gr) unsalted butter
- 1 cup (250 gr) sugar
- 1/3 cup (80 ml) milk
- For Glaze:
- 2 cups (250 gr) confectioners' sugar
- 1/4 cup (60 ml) milk
- Food colouring (optional)

Preparation
Step 1
Have all ingredients at room temperature.
Preheat the oven to 350 degrees F.
Cakelets:
In a small bowl, whisk together the eggs and vanilla until blended. In a seperate bowl, sift together the flour, baking powder and salt. Set aside.
In the bowl of an electric mixer fitted with the flat beater, beat the butter on medium-high speed until light and creamy, about 3 minutes. Gradually add the granulated sugar and beat until light and fluffy, about 3 minutes. Stop the mixer and scrape down the sides of the bowl. Add the egg mixture and beat on medium speed until well combined, about 1 minute.
Reduce the speed to low and add the flour mixture in three additions, alternating with the milk and beginning and ending with the flour. Beat each addition until just incorporated, stopping the mixer occasionally to scrape down the sides of the bowl. Divide the batter evenly among the prepared wells. Tap the pan on the countertop to release any air bubbles. Using a small spatula, spread some of the batter up the sides of the wells.
Bake until the cakelets are golden brown on top and a toothpick inserted into the cenre comes out clean, 20 to 25 minutes. Transfer the pan to a wire rack and let cool for 10 minutes. Invert the pan onto the rack and lift off the pan. Let the cakelets cool completely. Decorate as desired.
To make the Glaze: In a bowl, whisk together the confectioners' sugar and milk until smooth. Stir in food colouring as desired. Place the cakelets on a wire rack set over a baking sheet and slowly pour the glaze over the cakelets until completely covered. Let the glaze dry for 20 minutes before decorating or serving the cakelets. Makes 6 cakelets.
