Peanut Butter Noodles

Ingredients

  • 200 grms noodles parboiled
  • 2 tbsp peanut butter
  • 7-8 spring onions with greens chopped
  • 1 tsp ginger chopped
  • 6-7 cloves garlic chopped
  • 2 fresh red chillies chopped
  • 1/4 cup dark soy sauce
  • 1/2 green capsicum
  • 2 tbsp brown sugar
  • 1 tbsp vinegar
  • 1/2 cup bean sprouts
  • 1/4 cup roasted peanuts
  • 1 tbsp oil

Preparation

Step 1

1. Slice spring onion bulbs.

2. Heat oil a non-stick wok, add spring onions & sauté for 1/2 minute.

3. Add ginger-garlic-red chilies & sauté for a min.

4. Add dark soy sauce, 1/4 cup water & stir.

5. Cut capsicum into thin strips. Add peanut butter, 1/4 cup more water to
the wok & stir to blend well.

6. Add brown sugar, vinegar & mix. Add noodles, capsicum & mix. Chop spring
onion greens & add along with bean sprouts.

7. Toss & mix well. Add roasted peanuts & mix. Serve hot.
