Ingredients
- MICROWAVE:
- 4 russet potatoes, scrubbed, dried, and pierced with a fork (10–12 oz. each)4
- Olive oil
- COMBINE:
- 1 ⁄4 cup sour cream1⁄4 cup
- 1 stick unsalted butter, softened (8 Tbsp.)1 stick
- Minced zest of 1 lemon
- Salt and black pepper to taste
- 2 Tbsp. minced fresh chives2 Tbsp.
Preparation
Step 1
Preheat grill to medium-high.
Microwave potatoes until flesh is fork-tender, 15–20 minutes, turning every 5 minutes. When cool enough to handle, coat potatoes with oil. Grill potatoes until marks appear, about 3 minutes; remove from grill.
Combine sour cream, butter, and zest; season with salt and pepper. Serve potatoes with sour cream mixture and garnish with chives.
