Caprese Pasta Salad Recipe

Tomatoes, mozzarella and basil are a fresh accompaniment to any meal. Whole wheat pasta makes this caprese salad a vegetarian meal in itself.

Preparation
Step 1
Prepare pasta according to package directions. Drain and set aside in a large bowl.
Preheat oven to 450°F and line a rimmed baking sheet with foil. Mist with nonfat cooking spray.
Arrange tomatoes and garlic on baking sheet. Mist lightly with olive oil mister or non-fat cooking spray and roast in oven about 20 minutes.
In a small bowl, whisk together olive oil, vinegar, and oregano. Pour over pasta and toss to coat.
When the tomatoes are ready, add and any drippings from the pan into the pasta along with the mozzarella, and basil. Toss to combine and season with salt and pepper. Serve at room temperature.
