Black Beans & Rice

Ingredients

  • Black Beans:
  • 2 lbs dry black beans
  • 3 1/2 quarts of water
  • 1/4 c. olive oil
  • 2 onions, chopped
  • 2 gr peppers, chopped
  • 4 cloves garlic, minced
  • 1/2 c. red wine vinegar
  • 1/4 c. honey
  • 1 tsp cumin
  • Salt to taste

Preparation

Step 1

Sort and wash beans. Place beans and water in crockpot. Cook on low overnight or about 8 hours. Drain beans. Sauté onions, peppers and garlic in olive oil then add to beans. Add remaining ingredients and simmer 20 minutes. This makes 9 cups. Reserve 4 ½ cups of beans for this meal and freeze the remaining beans for another meal.
