Ingredients
- 8 oz macaroni
- 1 lb ground beef
- 1 med onion, chopped
- 1 med red bell pepper, chopped
- 1 garlic clove, minced
- 1 pkg taco seasoning
- 3 oz cream cheese
- 1/2 c. sour cream
- Salt and pepper
- 1 c. cheddar cheese
Preparation
Step 1
Cook macaroni according to package directions. Reserve one cup of pasta water.
In a skillet cook ground beef with onion and garlic. Drain. Add taco seasoning. Allow to simmer over low heat for 5 minutes. Add cream cheese, sour cream, ½ c. cheddar cheese and reserved cooking water. Taste and add salt and pepper, as needed. Stir in the hot drained pasta. Top with the remaining cheddar cheese.
