- 1/3 cup white vinegar
- 2 1/2 tablespoons sugar
- 1/2 cup vegetable oil
- 3 cups carrots, julienned
- 2 cups english cucumbers, julienned
- 1 jalapeño pepper, minced
- 1/4 cup mint
- 1/4 cup cilantro
