Step 1

Mix the olive oil, oregano, seasonings and sliced onions to make a marinade.

Trim fat off the lamb. Cut the garlic into bite sized pieces and put into slices slashed into the meat. They will be little pockets to fit the garlic in. Place the whole roast into the marinade and soak for several days.

Put 3/4 of the marinade and onions into a pan for sauteing just before the roast is ready.

Peel and quarter potatoes and add to roast. Roast at 350 degrees covered and uncover towards the last 1/2 hour.
